  1. Prepare 1/2 cup fine semolina
  2. Make ready 1/2 cup gram flour
  3. Take 1 1/2 cup whole wheat flour
  4. Get 1/2 cup coconut powder
  5. Make ready 1/2 cup mixed nuts
  6. Get 2 tablespoon oil
  7. Make ready 1/4 cup warm milk or less
  8. Get 5 tablespoon ghee
  9. Get Sugar syrup:-

  12. Take 1/4 teaspoon cardamom powder
  13. Make ready 1/8 teaspoon nutmeg powder
  14. Get Few strands of saffron Oil for frying

While making the bati, I have made few extra to make churma. Yes, batis are crushed and mixed with sugar, ghee and nuts. Traditionally it is made by mashing up bajri or wheat flour baatis or rotis in ghee and jaggery. More desi or traditional version of churma called choorma is very popular in Haryana.

Steps to make Burfi churmu:
  1. In a large mixing bowl add the wheat flour, gram flour and semolina and mix well. Make a well in the middle and add oil and warm milk and combine all to a binding consistency dough. (Take milk 1 tablespoon at a time as the dough needs to be of stiff consistency.)
  2. Take a lemon size ball in your palm and and press it by making a fist. Press hard and make muthiya. - In a frying pan add oil and let it heat on medium flame. Deep fry the muthia until golden brown. Remove from oil and let them cool. Fry the almonds, pistachios and cashewnuts.
  3. Crumble the cooled down muthias and grind them in a food processor resembling bread crumbs. Grind the nuts coarsely. - Sieve the churmu thru a sieve. Add cardamom powder, coconut powder,nutmeg powder, nuts and saffron. In a pan add sugar and water and make sugar syrup of 2 string consistency. - Add the syrup to the churmu and mix well. Add in the ghee and mix. - Transfer in a greased tray and garnish with nuts. Let it set. Cut to desired pieces and enjoy
