- Take 1 good amount of olive oil, I used about 100 ml approximately

- Get Rosemary, fresh is better but I only had dried
- Get Chilli, I used birds eye
Heat a small dry pan over medium-high heat and, once hot, add the coriander and fennel seeds. Directions Put the olives in a shallow bowl, add the lemon strips and herbs; season with salt and pepper. Toss gently with your hands to combine. Combine the olive oil, vinegar, bay leaves and garlic in a small saucepan and heat just until warm over low heat.
Instructions to make Marinated Olives:
- Gently heat the olive oil over low heat, add all the ingredients expect for the olives. Do not let the garlic burn or brown.
- Allow to cool to warm or room temperature then mix in the olives and transfer to a jar. Cover with lid and store at room temperature.
- Note: I did not measure any of the ingredients out, I added to my taste, I did have to add a little bit more of everything when the olives were in the jar a day later as they were slightly bland for us.
Toss gently with your hands to combine. Combine the olive oil, vinegar, bay leaves and garlic in a small saucepan and heat just until warm over low heat. Remove from the heat and stir in the lemon rind, thyme, rosemary and fennel seeds. These Marinated Olives are just like the ones at the restaurant, and are very easy to make. They are great to make in advance for parties or entertaining, because you can set them out as a hands-off hors d'oeurve.
