- Take Aubergine

Instructions to make Roasted mix veg:
- Preheat oven to 160. Peel and chop potatoes into small cubes. Remove the seeds from the courgette and chop. Dice up the aubergine. Put all in a bowl
- Add olive oil, salt and pepper and oregano. Mix well
- Put on a baking tray lined with parchment paper and pop in the oven for about an hour
Keep hearty veggies, like beets and carrots, together on one pan and less hearty veggies, like mushrooms and bell peppers, on another. In our photos, we have carrots, potatoes, onion, fennel and broccoli stems. In a large bowl, combine the squash, red bell peppers, sweet potato, and Yukon Gold potatoes. Separate the red onion quarters into pieces, and add them to the mixture. Roasting is a dry-heat method of cooking that makes the flavor of vegetables rich and sweet.
