Steps to make Ogura Matcha Cake:
  1. Add flour, maizena, green tea paste (mixed the green tea powder with 2 tbsp warm water), cooking oil, milk, 5 eggyolks and 1 egg in the mixing bowl, whisk until it mixed well
  2. Beat the eggwhites, sugar and cream of tartar until it reaches stiff peaks
  3. In separate 3 portions, gently mixed the eggwhite batter to the eggyolk batter until everything is well combined. Do not overtax and deflate the egg whites
  4. Bake in 170C with Au Bain Marie method around 50 mins till the cake tester comes out clean.
  5. Remove the pan from the oven, let cool on the rack. After that, let it cooled and gently remove the cake from the pan
  6. And tadaaaaa, the super moist, soft, fluffy ogura matcha is ready to serve!

When you add matcha green tea into the mix, the result is a beautifully textured cake that tastes and smells like green tea. I made this matcha sponge cake to make a matcha dome cake. You could use regular letter pape. This matcha cake is easy to dress up. Personally, my favorite garnish is freeze-dried fruit.
