So for the red sauce I used New Mexico red chile and ancho chile. I can find New Mexico chile in my store, but if you can't you can order on line or you can use a California red chile. Dried chiles should be pliable and smell. Cut pork or beef into small cubes.

Steps to make Carne en chile:
  1. Cut meat into small pieces
  2. Oil in large pan then cook meat
  3. While cooking peal tomatillos, use allumium foil to cook over comal (not burnt but cooked 2-3sides) when done put aside and cook more. after wrap all in foil all around all the tomatillos (1-2min).
  4. Cut nopales into small pieces. Lines like l. Put 1in water in pot (lower than nopales) add cilantro fresco and salt. Add half onion. medium heat. 20-25min
  5. (Salsa for meat) Place 3 teeth garlic in blender. Place 3 chiles. Salt. Little more than half (not 3/4). Water (double of tomatillos) Blend Fine. Then add to pan with meat (done)
  6. (Salsa to add on) Place 3 teeth garlic in blender. Place 10 chiles. Salt. Little more than half (not 3/4). Water (level of tomatillo) Blend Fine. Then add to pan with meat (done)

Add chopped chiles, garlic, onion, tomato and water and season to taste with salt and pepper.
