In a small bowl, mix together cream cheese and cheddar. Favorites: Bacon and Jack Cheese, and Cream Cheese Stuffed Jalapeños One of our favorite jalapeño poppers was the cream cheese stuffed jalapeño filled with onions, cilantro, cumin and a little bit of jack cheese. The other favorite is similar but has jack cheese and bacon instead of the cream cheese. Place the sheet tray of stuffed peppers in oven and broil until mozzarella.

Scrape out all of the seeds and veins and discard. (This is the HOT part of the pepper). Cut jalapenos in half lengthwise; remove seeds and membranes. Mix cream cheese and Cheddar cheese together in a bowl until evenly blended. Fill each jalapeno half with the cheese mixture.
Steps to make Stuffed Jalapenos:
- remove tops and seed core from jalapenos, rinse out
- cut cheese into 12 cubes, put one cube cheese in each jalapeno
- stuff each jalapeno with sausage, I used 2 -3 teaspoons sausage for eac
- wrap each with bacon slice, secure with toothpic
- bake in oven at 400°F for 45 minutes to 1 hour.
- An easier way to remove seeds is to split down lengthwise, then remove seeds, and stuff with desired filling….my husband made these and used ground sausage, cheese, then wrapped peppers in bacon.

Mix cream cheese and Cheddar cheese together in a bowl until evenly blended. Fill each jalapeno half with the cheese mixture. Put halves back together and wrap each stuffed pepper with a slice of bacon. Arrange bacon-wrapped peppers on the prepared baking sheet. Wrap each stuffed jalapeño with a half slice of bacon and stick a toothpick through the center to assure the bacon stays in place.
