  1. Fry the bacon in a hot oven proof pan till it starts to crisp.
  2. Whisk eggs together in a bowl & add grated cheese, Parsley & Basil
  3. Add Onion, Kale, Garlic & Oregano to the pan & cook for a few minutes till soft but not brown.
  4. Add the egg mixture & cook until the egg just starts to come away from the side of the pan. Drop tomatoes onto the mix & Transfer to oven & cook for about 15 mins.
  5. Remove from oven & allow to sit for a few minutes before serving
