The name is derived from the word chile which is Spanish in origin and refers to the spicy chili pepper. Instructions to make Mom's Chile:
  1. If using fresh tomatoes and you don't want the skin you can bring some water to a boil. Put the whole tomatoes in the water. Wait about thirty seconds.. Watch the tomatoes… You will see the skin start to split open. Remove from the water and let them cool for a few minutes and then the skins will slip off easily. You can cut them up and set aside
  2. Take one to two pounds of ground meat and brown in a skillet. If using a lean meat like Turkey or deer add a tablespoon of oil to the skillet before you add the meat.
  3. While the meat is browning cut up onion and green pepper and hot pepper if you want. But make sure to wash your hands if using the hot ones.. Add these to the meat and continue to brown. Add a little salt and pepper and about a teaspoon of chilli powder to the meat and stir. If using beef and you have more than about a teaspoon of fat drain it off because it will make your chilli greasy When the meat is nice and browned, Set aside
  4. Open all your cans. Add large can of tomato sauce to a large pot. Fill the same can with water and add it. Add all the beans. Stir in meat, onions, green peppers, and tomatoes.
  5. Put on a low to medium heat and let simmer and sir.. You can add more Chile powder to taste. Just remember that it gets hotter the longer it cooks
  6. Serve ontop of corn chips and top with shredded cheese and sour cream.
