We love quinoa with a zingy lemon dressing. In the pressure cooker, combine quinoa, sweet potato, chicken broth, and salt. While quinoa is cooking, massage kale with olive oil and salt using your hands. Combine water and quinoa in a saucepan and bring to a boil.

- Add the dressing ingredients to your blender and blitz until nicely blended - but don’t purée it, a few lumps are fine. Taste it here and adjust with more honey, salt and pepper as you like.

- Add the quinoa (check the packet instructions and cook then cool if needed).
- Add the dressing a bit at a time until you get a good coating - don’t do what I did and just tip it all in. It was a bit too much and made it all just slightly too wet.
While quinoa is cooking, massage kale with olive oil and salt using your hands. Combine water and quinoa in a saucepan and bring to a boil. When cooked, fluff it up with a fork and let it cool down a little.
