  2. Prepare 2-3 potatoes
  3. Get Cherry tomatoes

  7. Make ready 2-3 garlic cloves
  8. Prepare Salt, peper, rosemary, thyme, basil, coriander
  9. Get Juice of 1/2 lemon

Heat the oil in a skillet over high heat until hot but not smoking. Add the monkfish, shaking the pan as you add the fish to prevent sticking. Monkfish holds up to pan-frying, grilling, roasting, and baking. Take care, however: monkfish is a lean fish that tends to dry out if overcooked.

Steps to make Baked monkfish:
  1. Preheat the oven at 180ºC. Cut the potatoes in thin slides and put them in a baking dish. Add also the ginger in pieces which are big enough to identify later in case you do not want to eat them. Add some olive oil, 1/4 of lemon juice, salt, pepper, rosemary, thyme, basil and coriander and mix it all. Place it in the oven for around 20 minutes
  2. Shred the onion and add it to the baking dish together with the cherry tomatoes. Mix it all again and cook for around 15 more minutes
  3. Cut the monkfish in individual pieces, salt it and add it to the baking dish. Over the fish pieces, add the remaining juice of 1/4 of lemon. Let it cook for 15-18 minutes
  4. Cut 2-3 garlic cloves and put them in a frying pan, together with a very good virgin olive oil. Put them to medium heat and wait until they get brown. Add the garlic and oil on top of the monkfish 5 minutes before it is ready! Enjoy!!
