I want to share with you my favorite salsa recipe. It has great tomato flavor with the pop of cilantro and just the right amount of heat from the serrano chiles. This salsa goes well with chips, carne asada tacos, taquitos, eggs, and just about any other dish that you like to add salsa to. You will find a variation of this salsa on tables throughout Mexico.
Instructions to make Salsa Mexicana:
- Brush a teaspoon of Oil onto the Capsicum at first. Roast it on a low heat directly on the gas. Pierce it with a fork and hold over the heat and roast until done, evenly from all the sides.
- After it cools down completely, immerse it in water. Remove the skin and deseed it. Chop it finely and set aside for later use. Add Jalapenos very finely chopped to the Vinegar and set aside for later use as well.
- Heat the remaining oil in a pan. Saute Onions for 2-3 minutes. Then add the chopped Capsicum, Tomatoes, Sugar and Oregano. Add Salt to taste. Mix well. Also add Chillies in Vinegar that are finely chopped to it.
- Adjust Salt accordingly. Serve it right away. Enjoy!
