- Place in the BBQ and roast it untill you reach an internal temprature of 60-66c for medium. Around 1 hour and 30 minutes at a temprature of 170c. I add a bit of smoking wood at this point to add extra flavour.
- Once done let the meat rest for 15 minutes to allow the juices to redistribute through the meat👌
Spread garlic mixture evenly over the lamb, rubbing in thoroughly into the scored cuts. Transfer lamb, fat side up, to a large roasting pan fitted with a rack, and add broth. Mix and crush the herb oil ingredients in a large bowl. This will take a few hours depending upon the size of the leg, but it's this slow roasting that will make it flavorful. Stuff the slivered garlic and cut rosemary sprigs into the perforations.
