  3. In a pan heat 1 tbsp ghee,saute remaining onion,grated carrot,capsicum for 2 minutes.Add chilli sauce, soya sauce and salt to taste.Mix well.
  4. Add cooked rice to this mixture and mix well everyrhing.Mexican Rice is ready to serve.Transfer in a serving dish,garnish with chopped tomatoes and serve hot.
