- Mix the egg yolks and a little of the reserved pasta water into the pasta and stir quickly, add more pasta water to lightly coat the pasta. It’s a drier rather than wet dish.
- Add the Parmesan and stir.
- Serve with more Parmesan and ground black pepper.
