Instructions to make Mango, saffron and Samolina pudding (Halwa):
  1. Place pot over the medium heat. Put Samolina in to the pot and cook it for 2 mins. Take it off the heat put it into the clean bowl.
  2. Boil the water with sugar. Add mango purée to the boiling water on low heat. Keep stirring.
  3. Add saffron and roasted Samolina to the mango water. Keep stirring till it’s all lump free and become smooth in texture. Add Desi ghee at the last and mix it well.
  4. Transfer in to the bowl. Garnish with crushed pistachio and almonds.
  5. Enjoy Halwa.

What is Sooji? it's nothing but semolina you could also call it as Mango Semolina Pudding! Mango gives a nice fruity flavor to Mango Sooji Halwa. We all loved them back home and my friends and neighbor also found them yum.
