  23. Take 200 g canned diced tomatoes (or 3 tomatoes chopped)

  25. Make ready 1 & 1/2 kg whole chicken, cut into 6 pieces

  4. Add chicken cubes and chicken pieces. Brown chicken, turning occasionally, for about 30 minutes. Remove the chicken pieces from the pan. Set aside.
  5. Add rice with lemon slices and zest. pour in 4 cups water. Season with salt. Bring it to the boil. Reduce the heat, cover with lid, and simmer for 10-15 minutes. - Preheat grill. Grill the chicken for 10-15 minutes or until cooked through. Serve rice with grilled chicken garnish with raisins and roasted almonds.
  6. #NOTES: - - 1- For rice, start with 3 cups of water, and then add more if needed. - - 2- Whole lime powder is available in Middle Eastern grocery stores - Kabsa spice mix recipe adapted.

It is a rice dish cook along with different kinds of meat and other spices. Chicken Kabsa is a fragrant, mildly spiced, hearty. While this particular recipe smelled and tasted different than the Kabsa I have had (I know there are many variations to Kabsa, much like the Spanish Paella), it was still good. I do think that the broth used to cook the rice needs more chicken flavor, even after boiling the chicken in it, so next time I would add some boullion. Serve with a fresh mixed salad - preferably with a little lime vinaigrette.
