Dudhpaak is also a popular sweet item in Gujarat. Dudhpaak is a semi-thick mithai and delicious sweet that can be served hot or chilled. Doodh paak is a semi-thick mithai, brimful with the goodness of milk. The milk is simmered for a while; then the rice is added and simmered till cooked.

Steps to make Dudhpaak:
  1. Soak almonds and pistachios in boiling water separately. - Wash rice and let it soak until the milk is boiled. - Soak saffron in 2 tablespoon of warm milk
  2. On medium heat add ghee in a thick bottom pan. Spread it around and add milk to it. Bring it to boil. - - Remove water from rice and add 1 teaspoon of ghee to it and mix it with rice. - - Once it reaches boiling point add the rice and let it cook until its tender. - Add the sugar, almonds, charoli and pistachios to the milk. - In a bowl add milk powder and mix it with milk.
  3. Add the milk powder mixture to the boiling milk. Cook for further 5 minutes. Add the saffron milk, cardamom and nutmeg and mix well. - Turn off the gas and transfer in a serving bowl. Can be eaten cold or warm. - Refrigerate after 30 minutes if you like to eat cold.
  4. 2nd method - Omit milk powder and sugar and just add a tin of condensed milk. The rest of the method is same. - - To make it more rich add 50 grams of white chocolate.

Doodh paak is a semi-thick mithai, brimful with the goodness of milk. The milk is simmered for a while; then the rice is added and simmered till cooked. As the rice is cooked completely in the milk, it imbibes a luxurious flavour and aroma. The cardamom smells and aroma, end complete the royal feel of this dish! Doodh pak is Gujarati rice pudding and prepared during Diwali or other special occasions.
