  8. With the fresh sage leaves, toss in a little olive oil and sprinkle over the potatoes.
  9. Return to the oven and bake for a further 20-25 minutes or until the top of the potatoes is golden.
  10. Tip: Make it up the day before up until step 5, then cover and keep in a cool dry place until needed.

Season with salt and pepper and toss again. Transfer the potatoes to a shallow ovenproof container large enough so there's only a single layer. In a saucepot on medium heat, add the heavy cream, sage, garlic and a pinch of salt. Spread out potatoes in a single layer.
