Hello everybody, it’s Jim, welcome to our recipe site. Today, I’m gonna show you how to prepare a special dish, gujiya - the traditional way. One of my favorites food recipes. For mine, I will make it a bit unique. This will be really delicious.

Then make small round balls from the dough and make a cup-like-space in the balls to fill the sumptuous stuffing. After adding the filling seal corners in such a way that it secures the stuffing while frying the Gujiya. Roll the sides as per your choice of pattern. Heat ghee in a pan over medium flame.

To begin with this particular recipe, we must first prepare a few ingredients. You can have gujiya - the traditional way using 10 ingredients and 18 steps. Here is how you cook that.

The ingredients needed to make Gujiya - The traditional way:
  1. Prepare 2 cups maida
  2. Take 3/4 cup Ghee for moyan
  3. Get 1 cup or as required Lukewarm water to knead the dough
  4. Get as required Oil or ghee for frying
  5. Make ready For Stuffing:
  6. Make ready 150 gms khoya
  7. Prepare 1.5 cup dessicated coconut
  8. Get 1 cup chopped nuts
  9. Take 1/2 tbsp cardomom powder
  10. Take 1 cup boora /powdered sugar

It has a maida casing with a filling mainly of khoya and dry fruits. One can seal the edges by hand using the gentle stretch and fold technique. The folding requires a little practice and traditionally gujiya was sealed this way. Gujiya is served as a customary treat or gifted to loved ones during the festival of Holi.

Instructions to make Gujiya - The traditional way:
  1. Add in ghee to the maida little by little for moyan.
  2. Take some dough in fist and press in if it binds well the moyan is enough.
  3. Now add water little by little to form a stiff yet smooth dough.
  4. Cover it with damp cloth and set aside.
  5. Cut the coconut into pieces.
  6. Grind them.
  7. Mix in the khoya, boora, cardomom powder and nuts in it.
  8. Now as i have made gujiyas the traditional way it is an important step. We need a slurry of maida and water. Just mix 2 tblspn of maida in water to make a paste as shown in pic. Keep aside
  9. Take some cotton and a toothpick roll the cotton on it as shown.
  10. Now roll the dough balls like pooris.
  11. Using cotton swab, apply slurry on it.
  12. Add the khoya coconut mixture in the center.
  13. Seal it from the core forming a crescent shape.
  14. Now comes the twist. as we are not using mould I have pinched the lower edge folding it upwards sealing the gujiya. Be careful it shall be sealed properly else gujiya might get cracked up while frying.
  15. Make all the gujiyas the same way. You can use the mould too to shape them.
  16. Fry them in medium hot oil or ghee on medium flame.
  17. Until golden brown and crisp
  18. Strain out and let them cool completely. Store in an airtight container. Stays good upto one week. They wont remain till then though ;)

The folding requires a little practice and traditionally gujiya was sealed this way. Gujiya is served as a customary treat or gifted to loved ones during the festival of Holi. This colorful festival is marked with a change of season and these crescent-shaped fried dumplings are the traditional sweet that people love to munch on while they are busy celebrating this festival. Sooji Gujiya is known as Rava Na Ghughra in Gujarati, it's stuffing made without milk solids, instead used semolina, coconut and nuts, these stay fresh for a longer period. In the traditional method, it is deep-fried in desi ghee, however, it can be baked or air fried too.
