- Get Rice 2-1/2 mugs
- Prepare Sugar 2- 1/2 mugs
- Take 1/2 cup Water
- Make ready 1 Tbsp Yoghurt
- Make ready 3/4 cup Ghee or oil
- Make ready Cloves 4 -6
- Prepare 5-6 Black pepper
- Take Cinnamon stick (1)1 inch piece
- Get 6-7 Cardamom
- Prepare 1 Tbsp Lemon juice
- Take 1 cup Khoyaa
- Take Almonds
- Make ready Pistachio
- Get Dry dates
- Prepare Kishmish
- Get Dried coconut
- Get Food colour green, red, yellow
- Take (a pinch)
Instructions to make Mutanjan

- First of all soak rice & boil them with Elaichi (cardamom)cloves 2, - Kewara water 2 Tbsp till full - done.Put them aside.
- Make a syrup with sugar & 1/2 - cup of water.Add lemon juice. - Sugar Syrup should b watery - not sticky.
- Take a deep pan.Put ghee in it - along with cloves, black pepper, - Cinnamon stick & cardamom.Fry - it.Add sugar syrup in it.
- Now add boiled rice in it & mix - it with syrup nicely.Leave - it on simmer for 15 min or
- You can notice that water is - absorbed.In the end take three - different food colour a pinch - for each.Mix them separately in - 1Tbsp water for each.then put it - on rice in three sides.Also - sprinkle blanched dry fruits & - Kewara water.Cover with a lid. - Mix all rice along with nuts nicely
- Dish out your mutanjan and - garnish it with rest of nuts & also - with khoyaa.
- Serve it hot.
