  2. Break the egg on to a plate and add the milk. Mix gently with a fork.
  3. Now dip each piece of meat first in the egg mixture then in the breadcrumbs to coat.
  4. Add olive oil and butter to a large frying pan and heat until fat sizzles when you drop in some of the breadcrumbs. Add the schnitzels and turn the heat down a bit so that breadcrumbs go golden brown and don’t catch. Cook for a maximum of 2 mins each side, turning once.
  5. Remove from pan and squeeze over more lemon juice. Allow to stand for at least 5 mins. Serve with new potatoes and vegetables.
