The ingredients needed to make Roasted Cod:
  1. Get 750 g salted cod
  2. Prepare 1 Green pepper
  3. Make ready 1 red pepper
  4. Take 3 small onions
  5. Get 3 tomatoes
  6. Make ready 2 large eggs
  7. Prepare 10 medium potatoes
  8. Make ready as needed Olive oil
  9. Prepare Black olives, pits removed

Here's what you'll need to make baked cod with lemon: Cod fish - I buy mine frozen and thaw it before cooking. Add the cod filets to the dish and then coat all sides of the fish with the remaining garlic butter. Slice half of the lemon and add the lemon slices to the baking dish with the fish.

Instructions to make Roasted Cod:
  1. Start by desalting the cod over a period of 24 hours. Put the cod in a bowl of fresh cold water. Change the water every couple of hours to remove the salt.
  2. Once the cod is desalted, bring a pot of fresh water to boiling point and add in the cod and cook for 10 minutes. Remove the cod from the water and set aside once cooked.
  3. Peel then slice the potatoes into roughly 1cm slices.
  4. Using the same water the cod cooked in, add just a small pinch of salt and bring to the boil. Cook the potatoes for about 5 minutes, then remove from the water and set aside.
  5. Next prepare the rest of the vegetables (keep them separate). For the peppers cut in half, discard the seeds then slice them longways. For the onions, peel and cut in half then slice. Finally the tomatoes cut in quarters then roughly chop.
  6. Preheat oven to 180c.
  7. Using just your fingers break the cod steaks into smaller pieces and remove any fish bones.
  8. In an oven proof dish add in half of the sliced potatoes. I like to line them perfectly so they are not overlapping.
  9. Then add half of the cod.
  10. Next add half of the tomatoes, onions, peppers and a small handful of olives. Drizzle with a little olive oil (you'll probably need about 3-4 tablespoons of olive at this point).
  11. Repeat steps 7,8 and 9.
  12. Bake for 40 minutes or until the top layer has a nice golden colour.
  13. While that's baking, hard boil the eggs and then let them cool enough to handle then remove the shell and slice them in circles.
  14. Once the cod and potatoes are cooked remove from the oven and let it rest for 10 minutes then add the sliced eggs.
  15. While the cod is resting prepare a lettuce and tomato side salad then serve along side it.

To bake cod fillets in an oven, first you need a baking tray. I like using a glass baking tray. You can also line a piece of aluminum foil on a baking sheet and place the fish on top of it before baking.
