Add the butter, mayonnaise, yellow mustard, salt, and pepper to the food processor. Transfer the beet mixture to a container and cool it completely, uncovered. Add the eggs to the mixture, submerging them entirely in the liquid. When ready to assemble the pickled deviled eggs remove from pickling liquid.
Steps to make Deviled pickled eggs:
- Boil 8-9 eggs and rapidly chill in ice bath once done
- Peel eggs
- Put eggs in sterilized jar along with Dill, garlic & onion
- Combine water, vinegar, sugar, black pepper corns, tarragon leaves, salt in stainless steel pot and bring to simmer over med-med-hi heat. Remove from heat once to simmer (stainless steel pot will not react with vinegar)
- Pour brine over eggs in jar. Completely cover eggs.
- Water bath or steam cook for 15 minutes.
- Once eggs are done cooking, let cool and place in refrigerator for up to 2 weeks before you open. They will be at there best at the peak of week and a half.
Add the eggs to the mixture, submerging them entirely in the liquid. When ready to assemble the pickled deviled eggs remove from pickling liquid. Cut the eggs in half and place yolk in a food processor. Add mayonnaise, white wine vinegar, and mustard to the food processor and pulse until smooth. Either with a piping bag or two spoons, filled the egg shells with the yolk mixture.
