However, I've reduced the sodium of this dish by omitting the soy sauce and mixing the muy choi (which is already salty) in with the meat. Wet a dish, shake off excess water to prevent steamed pork from sticking to it. Place seasoned meat on dish, spread out and level meat very gently with the back of a wet metal spoon. Mix in the seasoned minced pork.
