Toss gently with your hands to combine. Combine the olive oil, vinegar, bay leaves and garlic in a small saucepan and heat just until warm over low heat.

- Gently heat the olive oil over low heat, add all the ingredients expect for the olives. Do not let the garlic burn or brown.
- Allow to cool to warm or room temperature then mix in the olives and transfer to a jar. Cover with lid and store at room temperature.
- Note: I did not measure any of the ingredients out, I added to my taste, I did have to add a little bit more of everything when the olives were in the jar a day later as they were slightly bland for us.

Remove from the heat and stir in the lemon rind, thyme, rosemary and fennel seeds. These Marinated Olives are just like the ones at the restaurant, and are very easy to make.
