  1. Strain as much water from cottage cheese as possible.
  2. Mix together cottage cheese, egg, 1/2 tsp salt, sugar until well blended.
  3. Add flour until consistency is a dough you can roll.
  4. Fill medium pot 3/5 full of water. Add 1 tablespoon of butter and 1 tablespoon of salt. Bring to a boil.
  5. Sprinkle flour in large cutting board, take a handful of dough and roll it on the board into a tube. Cut pieces off in diagonal strokes, about 1/2 inch wide. Keep doing this until dough is all cut up.
  6. Put pieces in boiling water, stir gently in the beginning to prevent sticking.
  7. As pieces float to the top, remove them from the pot with a large straining spoon. Place in a serving bowl with 1 tablespoon of butter. As pieces are added, stir to distribute butter.
  8. Serve with sour cream, jam and/or jelly on the side.
