- Preheat the over to 180 degrees centigrade. Roll the pastry out into a quiche dish or shallow pie dish. (I don’t have a quiche tray so I used a pie dish). Pierce the pastry base with a fork place a sheet of baking paper and baking beads on top. Blind Bake in the oven for 15 minutes
- While the pastry is baking, fry the onions, garlic and leek until soft.
- Add the thyme, mushrooms and seasoning and fry until the mushrooms are soft. Then remove the veg from the pan and quickly fry the nduja.
- Add the cream, eggs, milk, seasoning and cheese to a jug and whisk together.
- Place the veg and nduja into the pastry case. Then cover I the egg mix.
- Bake in the oven for 25 minutes or until brown on top
One of the more popular quiche recipes is Quiche Lorraine, which combines bacon and cheese. This Make Ahead Quiche is absolutely, hands-down, my favorite freezer meal ever! Every time I make a ham and have leftovers (which is pretty much every time I make a ham), I put together two or three of these quiches and keep them in the freezer for those times I just don't feel like cooking. This is hands down one of my most go to recipes. Whip this up with whatever you have in the fridge already..
