  4. Once you have all 4 bulbs separated toss them in to a slow rolling water and leave for about 30seconds to 1 minute. After the time is up quickly attain the garlic bulbs out.
  5. Pick and extra skin off.
  6. Crush your fresh thyme with a mortar and pestle. Not too hard. Enough to release the oils.
  7. Fill the jar about a third of the way with garlic bulbs. Then add the crushed thyme.
  8. Fill the rest of the jar with garlic. About 4 fifths of the way.
  9. Pour in your honey all the way to the top. Leave some space for the air bubbles to rise. Then top off with honey so it comes to the top lip.
  10. Close the lid tightly and date. You can begin to use this in about two weeks time. Store in a cool place like a cabinet.
