- Pour the water Kefir grains into airtight bottles and add any additional flavouring and lave in a dark place for a further 24-72 hours for the second fermentation which will produce carbonation. Replace fruit with fresh every 24 hours until you get the desired carbonation. When ready, add ice and serve.

I prefer to brew with an airlock as it lends a better taste, in my opinion. Just like kombucha, it can be bottled to increase carbonation, and flavored. Step Three: Strain the water kefir.
