  3. Bring 1 cup of water and 1 cup of sugar to a boil, allow the sugar to dissolve then add the peels and reduce to a simmer. Cook for 60 minutes on low.
  4. Remove the rinds to a rack to cool down.
  5. Spread the extra sugar in a sheet pan then toss the rinds in the sugar till they are evenly coated.
  6. Place back onto the cooling rack or in a tray lined with foil and allow to dry for about half a day. Note: The rinds will not fully dry out but the sugar will harden slightly on the outside.
