Hey everyone, it is Brad, welcome to our recipe page. Today, we’re going to make a special dish, mee siam. It is one of my favorites food recipes. This time, I will make it a bit tasty. This is gonna smell and look delicious.

Mee Siam is typically garnished with shredded omelette, scallions, bean sprouts, garlic chives, and lime wedges. In Malaysia a "dry" version is more commonly found, which is essentially stir frying the rice noodles with the same ingredients used in the Singaporean version. Mee Siam is a common dish as breakfast, brunch or lunch in Malaysia. Mee Siam or "Siamese noodles" is basically spicy fried rice vermicelli with various toppings such as shrimp, chicken, fried firm tofu, and shredded omelet.

Mee Siam is one of the most favored of recent trending foods on earth. It is easy, it is quick, it tastes delicious. It is enjoyed by millions daily. Mee Siam is something which I’ve loved my entire life. They’re nice and they look fantastic.

To get started with this recipe, we have to prepare a few ingredients. You can cook mee siam using 24 ingredients and 6 steps. Here is how you cook it.

The ingredients needed to make Mee Siam:
  1. Prepare 300 g rice vermicelli (meehoon) - soak in water for 5 minutes and drain
  2. Take 300 g prawns - peel and devein
  3. Take 1 cup beansprouts (peel both ends to get a crunchier bite texture)
  4. Get 1 cup chives, cut into 3cm length
  5. Take 1/4 cup dried shrimps, wash and chopped coarsely
  6. Get 2 pcs firm tofu, slices (optional - I am not a big fan of tofu)
  7. Make ready 4 kaffir lime leaves, shredded finely
  8. Take 1/3 cup cooking oil
  9. Take Calamsansi cut in halves to serve at the side (optional)
  10. Get Ingredients to be pounded or blended together:
  11. Get 4 cloves garlic
  12. Get 4 shallots
  13. Get 1 1/2 tsp turmeric powder
  14. Get 3 Tbsp chopped ginger flower (Bunga Kantan)
  15. Take 1 stalk lemongrass chopped finely
  16. Take 3 bird eye chilies (if you like it spicy)
  17. Make ready Seasonsings:
  18. Take 2 Tbsp fish sauce
  19. Take 1 Tbsp soy sauce
  20. Make ready 1/2 Tbsp tamarind paste
  21. Make ready 2 tsp sugar
  22. Make ready 1 tsp chicken stock granules
  23. Take 1/2 tsp white pepper
  24. Take 2 cups water

Mee Siam which means "Siamese noodle" in Malay, is a local hawker dish which makes for an ideal breakfast type of food. (Okay, so I wanted to write this because it is quite under-rated.) A basic Mee Siam comprises of rice vermicelli (bee hoon) along with tau pok and hardboiled egg, all of which are in a tangy and sweet-spicy gravy. Mee Siam is made by stir frying rice vermicelli with some chilli paste. Prawns and bean sprouts are also added to the rice vermicelli. It is then served with a sweet and sour gravy which is slightly spicy and finally topped with hard-boiled eggs, fried bean curd, half of a calamansi lime and some chinese chives.

Steps to make Mee Siam:
  1. Prepare all the ingredients!
  2. Heat oil in the wok. Lightly fry the dried shrimps and tofu but separately. Dish out and put aside.
  3. Stir fry the pounded ingredients and kaffir lime leaves until aromatic. Add prawns and fry until they are half-cooked. Dish out only the prawns and put aside.
  4. Add in seasonings and bring to boil. Then add meehoon and stir-fry.
  5. Mix in dried shrimps, tofu, prawns, chives and beansprouts. Mix them well for 3 minutes or until everything are cooked.
  6. Serve with cut lime at the side to drizzle if preferred.

Prawns and bean sprouts are also added to the rice vermicelli. It is then served with a sweet and sour gravy which is slightly spicy and finally topped with hard-boiled eggs, fried bean curd, half of a calamansi lime and some chinese chives. This Mee Siam is based on the Malaysian version - which is a hot and spicy dry noodle dish. There's also a Singapore version that's similar, but is served with a spicy gravy. I decided to go for the Malaysian version because it was easier to modify in order to make it into a quick dish.
