Remove from the heat and cool slightly. Add the rest of the gelatin then stir until dissolved. Take off the heat and stir the soaked gelatin in until melted, and then stir the cream and vanilla in. Gently stir cream to help dissolve sugar.

  1. To Prepare jelly, pour the jelly powder in a bowl and add the hot water. Stir well until it's all dissolved. Let it completely (cold). Pour into the 6 medium glasses, let it set in the fridge, tilting the glasses so that the jelly sets on one side of the glasses. Leave to set for 3-4 hours.
  2. Meanwhile, prepare the Panacotta: Dissolve the gelatin in half cup hot water and set aside.
  3. Place the milk, cream, vanilla essence and sugar into a pan and bring to a simmer. then add the liquid gelatin to the pan, and take off the heat. Stir until all the ingredients are combined. Set aside to completely cool.
  4. Remove the set jellies from the fridge and place them upright on the tray. Pour the cold Panacotta on to each glass, covering the jelly completely. Place the tray with glasses into the fridge and until the Panacotta has set, about 3-4 hours.
  5. Remove from the fridge and pour a thin layer of Strawberry puree on top of the Panacotta in each glass bowl. Top up with one cherry and one mint leaf on each one. Then serve

Take off the heat and stir the soaked gelatin in until melted, and then stir the cream and vanilla in. Gently stir cream to help dissolve sugar. When sugar has dissolved, add cream with gelatin and stir to combine then remove pot from heat. Press through a sieve to remove seeds, and keep sauce to serve on/with the vanilla panna cotta. When ready to serve, unmold each vanilla panna cotta onto a serving plate, and drizzle the raspberry syrup on top or as desired.
