  1. Mix 650ml of Luke warm water with the sugar, oil and yeast and leave for 10 minutes.
  2. Mix flour, semolina and salt together in a large bowl and add the wet ingredients and mix together using a fork. When it's well mixed tip out onto a worktop and start kneading with your hands until smooth. This will take around 5 minutes.
  3. Dust dough with flour and place in a bowl, covered with a tea towel to rise for an hour.
  4. When ready tip dough on to worktop and portion into 8. The dough is now ready to be rolled and stretched to use for pizza or calzones.
