Chana chaat in aloo katori' is a typical 'dilli wali chaat' in a fancy crispy potato katori. In this recipe I made katoris or basket with potatoes, but there is another variation of the katori chaat.

  21. Take for samosa outer covering:
  22. Take 3/4 cup maida
  23. Prepare 2 tbsp oil/ ghee
  24. Prepare 1/4 tsp ajwain seeds
  25. Take 1 tsp lemon juice
  26. Prepare to taste Salt
  27. Get for For crispy onion pakoras:
  28. Make ready 2 big onions sliced
  29. Make ready 1 cup besan
  30. Prepare 1/4 tsp turmeric powder
  31. Make ready 2 tbsp red chilli powder
  32. Prepare 1/2 tsp ajwain seeds
  33. Prepare 2 tbsp finely chopped fresh coriander leaves
  34. Make ready to taste Salt
  35. Get for For Tokri/ katori chaat
  36. Take 8 tokri/katoris basket
  37. Prepare 2 finely chopped tomatoes
  38. Prepare 2 finely chopped onions
  39. Get 8 sev puri
  40. Get 50 gms besan sev
  41. Get as required Sweet chutney
  42. Make ready as required Pudhina chutney
  43. Make ready 1 cup yoghurt/ fresh dahi (whisked)
  44. Take as required Finely chopped fresh coriander leaves for garnish
  45. Make ready as required Chaat masala
  46. Prepare as required Pomegranate seeds

Chaat are very easy to assemble and can be prepared well in advance. In any party the chaat counter is the most crowded one. The sweet, tangy and spicy mix of the chaat makes it an unusal combination. Fried Paneer chunks sauteed in harrisa sauce rolled in soft wraps were bang on to taste.

Steps to make Dilli Tokri Chaat:
  1. In mixing bowl add maida, oil/ ghee,salt mix and bind into tight dough. Cover & keep aside for 1/2 hour. Make 8 equal balls. Roll each into semi thick puris. Place & stick this rolled puri on back side of katori (as shown). Put in hot oil, deep fry on medium flame,as the steel katori and Tokri.. separate, remove steel katori from hot oil,lower the flame and fry tokri till golden brown and crispy. Similarly prepared all tokris in this way.
  2. For samosa stuffing..mash boiled potatoes when they are still warm. In kadhai add heat oil,do tempering of cummin seeds,as they splutter add & saute green chillies ginger paste & chopped coriander leaves,till dry mixture formed. Now add mashed potatoes mixture, boiled peas and add all spices.Mix well and cool the mixture before stuffing.
  3. Prepare soft dough for samosa outer covering from mentioned ingredients for it. Divide prepared dough into 4 balls, flatten each of them into round puris cut in half,fold each half to make cone, stuffed each cone with prepared potato mixture..seal the edges and deep fry prepared samosas in hot oil on slow flame till golden colour and crispy.
  4. Prepare crispy onion pakoras..in mixing bowl add sliced onion, sprinkle & mix salt. Keep aside for 10 mins. Now add besan and spices mix and deep fry Cripsy Onion Pakoras in hot oil on medium flame.
  5. To prepare Tokri Chaat.. Keep all the required ingredients ready.
  6. In mixing bowl (for individual serving),add 1 samosa,break into pieces. Add 4 small size crispy onion pakoras, 1 crushed sev puri, chopped tomato, onion,chaat masala. Mix well. Fill this prepared mixture in one prepared tokri, pour sweet chutney, phudina-kothmari chutney, whisked yogurt, sprinkle besan sev, finely chopped coriander leaves,chaat masala and serve it garnishing with pomegranate seeds.
  7. Similarly prepared all Dilli Tokri Chaat..at the time of serving.
