In a food processor, combine the cilantro, mint leaves, chile pepper, salt, onion and tamarind juice. Process to a fine paste, adding enough water to achieve a thick sauce. - Get 30 gms mint (Asda/M&S and all the leading grocery stores do a 30 gms pack)
- Take 60 gms coriander (*NOT PARSLEY
- Take 1 red onion
- Get 1 lemon/lime
- Prepare salt as per taste
Use all cilantro for cilantro chutney and all Mint for Mint Chutney. Adjust seasoning and spices to taste. Steps to make Mint Chutney:
- Wash everything under running water, pick the mint leaves off from the stems. If you don't mind spicy, you can add 1-2 green chillies in it too.
- Put everything in a jar, squeeze the lemon juice, add salt. Blitz it till it turns into a puree. Serve it with fritters, layer it on sandwich, mix a spoonful in salads.
