Instructions to make Mint Rice:
  1. Take 2 cups rice wash in water and keep aside for half an hour in water Now we boil the rice.For 2 cups,take 6 cups of water.Boil for 10 mins by covering and then once you get a boil then cook for 5 mins more.Drain out water and keep rice aside.
  2. Now make a mint coriander paste.In a mixerjar,take mint and coriander leaves add 1/2 lemon juice,2 chopped green chilli and churn in mixer.This is our flavour in the rice.
  3. In a pan take 2 tbsp of oil and 1 tsp ghee.first fry cashews,now take par boiled potato and cook with salt in the same pan,take a small piece of cinnamon sticks and 1 tsp cumin seeds;add finely chopped garlic cloves. Add 1 finely chopped onion and 1 green chilli. Now add boiled potato,addsome fried onions,raisins and mix and cook.Leave some fried onions for garnishing.
