Steps to make Mint Khandavi:
- Take a mixer and add 1cup water add ginger and mint leaves and make a fine paste. Once the paste is made, sieve it.
- Then in the mixer, add 1 cup water, gramflour, curd, ginger, Red chilli and salt and make a fine paste.
- Heat a non stick pan, and pour this paste. Keep cooking to avoid lumps.
- Now pour this mixture on a clean slab, once cooled, cut into thin long strips and roll.
- In a mini fry pan, take some oil and heat it. Now add mustard seeds and pop it up, then pour this mixture on Khandvi.
- Your tasty mint khandavi is now ready. Enjoy
Khandvi can be served with cilantro/coriander chutney, mint chutney or by itself. It is best to prepare Khandvi fresh and serve immediately. However, you can store them in the refrigerator in an airtight container for a day or two.
